Recipe: Easy Roasted Tomato and Burrata Pasta
I have shared this before but cooking is not my specialty. I do it more out of necessity than anything else. My fiancé is the real chef in the house and makes the best dishes. But, during quarantine, like many of you, we started cooking a lot more and I found a little more comfort in cooking. 

I grabbed burrata at Trader Joe's (because it is DELICIOUS) and some tomatoes and basil. I wasn't fully sure what I would do with them but ended up just pulling this pasta together with what I had on hand. It was maybe one of the best things I have ever made and it is SO easy to make. 

Here's what you will need:
- Burrata (I got mine from Trader Joe's and what I like about their's is that it comes in 2 balls so we were able to use half a ball each and then save one for another meal. One larger ball of burrata would have been too much for just the two of us).
- Grape tomatoes
- Minced Roasted Garlic
- Good olive oil 
- Balsamic Glaze
- Salt
- Pepper 
- Basil 

1. Preheat your oven to 400. Toss grape tomatoes in olive oil, minced garlic, salt, and pepper. Spread out your grape tomatoes on a baking sheet and bake for 1 hour. 

2. Boil water and make pasta of your choice. We like angel hair whenever we make pasta. 

3. Add the roasted tomatoes on top of your pasta and use some of the juice to pour over as well. 

4. Add half of a ball of burrata. 

5. Chop up some fresh basil and garnish. 

6. Top with good olive oil, salt, pepper, and balsamic glaze and voila! I say 'good' olive oil because you can really taste the olive oil in this recipe so you want something that is flavorful.

This is not a healthy recipe but the flavors are out of this world. Even though the burrata is heavy, the rest of the ingredients were so light and fresh that it just tasted like summer!

This is also something you could easily make for a dinner party as it's so quick to make and you can make large amounts easily. It presents beautifully and it's just soooo good. 

We don't eat a lot of pasta at home  you could also sub the pasta for a sliced baguette to dip into the burrata or could do this on top of an arugula salad or even with grilled chicken if you want to do something lower in carbs!
